Jeera-rice........
Ingredients......
2 cups basmati rice
2 tsp cumin/jeera
1 inch cinnamom
1green cardamom
1 bay leaf
2 cloves
4 black peppercorns
4 cups water
2 tbsp oil
1 green chilly finally chopped
Chopped coriander leaves for garnishing
salt to taste
method......
soak the basmati rice in water for 30 minutes.
drain the rice and keep aside.
heat a pan and add oil ,when the oil becomes hot, add the cumin ,spices,when they are roasted add green chilly,curry leaves,let the oil fragrant from the spices.
add the soaked rice.
stir and saute for 1-2 minutes.
add salt and water.
cover and cook the rice is but not mushy or pasty.
keep checking in between.when all the water is absobed switch off the flame and leave for 1 min to settle.
garnish jeera rice with chopped coriander leaves and serve hot with some gravy or raitha.
