Carrot halwa..........


Ingredients.....

2 cups grated carrots 
2 cups milk
1 cup sugar (to taste)
200 gm khoya (optional)
1/3 cup dry fruits crushed(almond,cashew,pista)
1/2 tsp cardamom powder
10-15  raisins
2  tbsp ghee

Method.....

1) wash, peel and grate the carrots .
2) Heat pan and add ghee when its hot add grated carrot and fry till it looses its raw smell.
3) mix milk to carrot in a pan.
4) continue to simmer and keep stirring in between.
5) after 15-20 minutes add cardamom powder and stir.
6) when the mixture has started thickening, add sugar.
7) stir and continue to cook.
8) when the mixture has almost dried, add khoya and raisins and crushed  dry fruits.
9) stir and cook further for 2 minutes.
10) serve carrot halwa hot or warm or cold.

Sooji halva......






Ingredients....

2 cups sooji/ rawa
1/2 cup ghee
1/3cup dry fruits crushed (cashews,raisins,almonds,pista....etc)
1f2 tsp cardmom powder
4cups water
1 cup milk
1cup sugar(to taste)



Method.....

Heat a deep pan on a medium heat and when hot add the ghee. When it melts, add the Sooji and mix well,roast the sooji stirring frequently till it begins to turn a very light golden color. 
Now add the dry fruits to  the Sooji and mix well.
on other side... in a separate pot and on medium heat, bring a mixture of the milk, water, sugar to boil
When the Sooji is roasted, gently add the hot water and milk stirring all the while to prevent lumps from forming.
 Cook the mixture till it is thick and begins to come away from the sides of the pan.
Turn off the heat and serve hot ,warm or cold.
