Rasam Powder.....



Ingredients:
1 cup Coriander Seeds
1 cup Red Chilly
5 to 6 Black Pepper
1 tsp Cumin Seeds
1 tsp Fenugreek Seeds
1 tsp Mustard Seeds
1/2 tsp Asafotedia
oil 1 tsp

Method......
1)dry raost all the ingredients using little oil or without.
2)let it cool to room temp  and grind to fine powder.






south Indian sambar masala / gojju pudi.......







Ingredients.......
1 cup red dry chilly
1/2 cup black gram(split without skin)
1/2  cup bengal gram(split without skin)
1 cup coriander seeds
1 tsp fenugreek seeds
2 tsp sesame seeds
2 tsp cumin seeds
1 cup dry coconut grated
1/2 tsp asafoetida
1 tsp oil(you can avoid also)


Method.....

1) heat pan and roast all the above ingredients except coconut,using oil.
 you can avoid oil and dry roast spices without oil also.
2)switch of the flame and roast coconut in same hot  pan for some time .
3)now grind all these ingredients together to powder.
4)store it in air tight container.
5)you can use this for more than 6 months for sambar ,curry,gojju....etc

plain and masala  Paddu/gudpangla recipe........




special tawa/pan required.....


Ingredients......


 basic dosa batter  (method to prepare)
oil 1 tsp (for each batch)



Method 1....
1)Heat the gundponglu tawa/pan,add little oil(2 to 3 drops in one) in each wells.
2) start filling  batter into the little wells of the tawa.
3)After a min, turnover paddu using the wooden stick/spoon .
4)Once both the sides are browned, remove from the tawa
5) serve hot with chutney of your choice.






 Masala paddu/gudpangla

ingredients.....

2 onoin (finally chopped)
2 green chilly (finally chopped)
fresh coriander handfull (finally chopped)
1 grated carrot




Method 2
add these extra ingredients to the batter and follow same Method 1 as top.................

Basically it is break fast but 
it is a good evening snack as well..............



Basic dosa batter preparation ......








Ingredients.......

Rice - 3 cups
Urad dal - 1+1/2 cup
poha/flattened rice....1 cup
Methi(fenugreek) seeds - 1 tsp
Baking soda -1 tsp
Salt - add to taste.


Method............
1)Clean Urad dal and Methi, wash then soak them in water for 5 hours or the entire night.
2)Clean rice and poha  wash and soak it in a different bowl for 5 hours.
3)Remove water from the soaked dal and grind Urad dal-Methi with little water to make a fine   paste then put it in a big bowl.
4) Similarly using very less water grind the rice, but make a bit thicker paste.
5)Mix the 2 pastes together and prepare a thick mix which when poured with a spoon does not     fall freely.
6)Add baking soda to the mixture cover and keep aside for 12-14 hours,allowing it to ferment.
Fermented mixture doubles in quantity.
7)add salt when you are ready to prepare dosa and mix well.
 This mixture is ready to make Dosa............

Jawar dosa.....






Ingredients....


1 +1/2 cup jawar flour
1/2 cup rice flour
1 onion (chopped finally)
2 green chilly (chopped finally)
cumin 1 tsp
bunch of fresh coriander leaves (chopped )
salt to taste
oil to spread on tawa and dosa
water for batter consistancy


Method.....

1) mix jawar and rice flour ,salt ,cumin seeds,chopped onion +green chilly+coriender 
and water .batter should little thin than usual dosa .
2)heat tawa and spread 1/2 tsp of oil on it.now add a table spoon full of batter on it and spread evenly and add 1/2 tsp of oil on it.close lid wait till it changes color and turn to another side and roast till its done.this dosa takes little more time compared to normal dosa.


serve hot with coconut chutney or your favorite  chutney .


Besan dosa...







Ingredients....

2 cup besan (bengal gram floor)
1 onion (chopped finally)
1 green chilly (chopped finally)
1 tomato (chopped finally)
1 tsp red chilly powder
1/2 tsp turmeric powder
cumin 1 tsp
bunch of fresh coriander leaves (chopped )
salt to taste
oil to spread on tawa and dosa
2 cup water for batter


Method.....

1) mix all the ingredients without water and oil.
2)add litle by little water and prepare dosa consistency batter. 
3)heat tawa and spread 1/2 tsp of oil on it.now add a table spoon full of batter on it and spread evenly and add 1/2 tsp of oil on it,roast till its done.
serve hot with coconut chutney.red chutney or pudina chutney.


Raw Banana Dosa.......







Ingredients....

Raw rice    1 cup (soak in water for 4 to 5 hours)
Raw banana 2(medium size)
1 onion (chopped finally)
2 green chilly (chopped finally)
cumin 1 tsp
bunch of fresh coriander leaves (chopped )
salt to taste
oil to spread on tawa and dosa
water for batter


Method.....

1) in a mixer grinder take soaked rice and banana ,salt and little water ang grind to make batter.
add water if needed .batter should not be thin or too thick.
2)add chopped onion,chilly,coriander and cumin seeds and mix well.
3)heat tawa and spread 1/2 tsp of oil on it.now add a table spoon full of batter on it and spread evenly and add 1/2 tsp of oil on it,roast till its done.
serve hot with coconut chutney.

What fruit is this...........(iced guava)

So attractive color pink.....
Shape like an apple......
Taste completely like guava......




Recently i visited a mall where you get all international food items.
And i was attracted by this fruit.which was packed in a transperent cover and tagged as iced guava ,i asked a selling staff  about this fruit ,she explained name,and said  is imported from thailand.
I asked for price ....she checked and said 660 rs/kg.
I was surprised and thought of tasting a new fruit entered indian market.i took one fruit and bought it for 370 rs.


After arriving home excitedly opened and pulled out the fruit and cut open the plastic cover ......thats really shocking ...!,
The fruit was peeled clean,there was no skin to fruit.when i cut open the fruit to my disbelief ,the outer skin only was pink,i could notice it was some color or dye.according to my knowledge the fruit was peeled and immersed in a color for some time.and as there is no skin the fruit easily soak color.

And when i took a first byte.....
Its our guava...my dear friends.i was shocked.....
The taste has been enhanced by making it more sweeter than usual.may be along with color they mixed some sugar syrup as well.
The taste was artificial.i could feel the bitter  taste of color after finished eating.
And i dont know what all chemical and preservative  they added to make it so attractive.


I was fooled .....may be by the attractive packing,marketing person or i did not think of fraud in this way ,may be because the mall is reputed and well known.

The guava was peeled nicely giving it a shape of apple and giving a nice color .
The job to fool customer is highly appreciable,where a customer is buying 60 rs/kg
Fruit for 660 rs/kg.

Now a days any thing can happen with any one.we should be really  aware.
